Brand History

Einstein Bros. Bagels was founded in June 1995, in Ogden, Utah by the restaurant corporation Boston Chicken. In March 1995 Boston Chicken, Inc. originally formed the Einstein and Noah Bagel Corporation as Progressive Bagel Concepts, Incorporated (PBCI) by purchasing four retail bagel chains: Brackman Brothers, Incorporated (Salt Lake City), Offerdahl’s Bagel Gourmet, Incorporated (Fort Lauderdale), Baltimore Bagel (San Diego) and Bagel & Bagel, Incorporated (Kansas City). All of these were located in regions of the United States without a longstanding bagel tradition.

In 1989 Noah Alper has opened Noah’s Bagels store which was located on College Avenue in Berkeley, California. In 1996, Einstein Bros. has bought the chain of 38 stores for $100 million.

In the early 1990s, Ramin Kamfar founded New World Coffee and in 1998 purchased Manhattan Bagel out of bankruptcy. One year later, in 1999 the combined company bought Washington, D.C.-based Chesapeake Bagel Bakery.

Because it had loaned too much money to franchisees, in 2000 Einstein Bros. filed for bankruptcy. So, it was bought by New World Coffee for $190 million.

In 2014 JAB Holding Company and BDT Capital Partner purchased Einstein Noah Restaurant Group.

Last year, on the 5th of August 2021, Einstein Bros. announced that it had merged with Caribou Coffee and Panera Bread to create Panera Brands.

Nowadays, there are more than 320 Einstein Bros. Bagels locations all over the United States, including Oregon, Colorado, Arizona, Georgia, California, North Carolina, Michigan, Tennessee, Virginia, Florida, New Jersey, Illinois, Connecticut, Ohio, and Pennsylvania.

The types of bagels include sesame seed, asiago, pumpernickel, blueberry, pretzel, chocolate chip, potato, cinnamon raisin, poppy seed, plain, cinnamon sugar, honey, whole wheat, 9-grain, and garlic. Also, you can order some of the tasty gourmet-topped bagels such as jalapeno cheddar, apple cinnamon, spinach Florentine, green Chile, six cheese, and power protein. You can order the bagels with a wide variety of shmears and cheese toppings. Some of the flavors include smoked salmon, chive, and onion. Other toppings include peanut butter, honey, Nutella, hummus, and jelly.

The store does not offer just bagels, but also an assortment of egg sandwiches that cost around $6.5 and include the Swiss egg sandwich, the Santa Fe sandwich, the spinach mushroom sandwich, and the southwest egg white sandwich.

The lunch items cost anywhere between $6 and $8 and include Pizza Bagel, Tasty Turkey, Avocado Veg Out, Nova Lox with Side, and Turkey & Cheddar or Ham & Swiss, to name a few.

The customers’ favorites are the chicken pesto hot sandwich, the asparagus and mushroom egg white sandwich, and the green Chile club, but they like also the shmears and toppings. A popular choice among vegetarian customers is the VegOut sandwich. The store is willing to prepare sandwiches and salads without meat if you ask for this.

In general, the service is quick and good. The wait time may be a little longer during breakfast. Though, most of the customers request “to go” orders on their way to their jobs. On the other hand, if you want to sit down for a fast snack the store provides the option of dining in.
