Brand History

Rubio’s Coastal Grill history starts back in 1983 when the first location was opened in the Mission Bay area of San Diego, California by Ralph Rubio. Since that year and until now, more than 200 million fish tacos were sold in their restaurants.

The Coastal Trio Tacos Rubio'sRalph Rubio said that the Rubio’s Baja Grill company is the result of a challenge his father, Ray has started, when he told him “To get off his surfboard and make something of his life.” This happened in 1982, and even though Ralph didn’t have any experience in business administration he had a great asset, the recipe of the fish taco, which became the chain’s signature dish. He got this recipe during his holidays in the mid-1970s from a taco shop in San Felipe, a fishing village in Baja California.

The young surfers around just loved the fish taco and so the restaurant became popular and encouraged the expansion plans. Though, at the beginning the expansion was cautious and slow. The second restaurant was opened three years later, in 1986, on the College Avenue close to San Diego State University. There, a third location was opened the following year, in 1987.

In 1999 Rubio’s company went public and made its first stock offering on the NASDAQ market.

In order to help its expansion into new markets, the company initiated a franchise program in the year 2000.

Nowadays, there are nearly 150 Rubio’s restaurants located in different states from America such as Nevada, California, Colorado, Arizona, Oregon and Utah.

Rubio’s menu includes more than 40 dishes based on the cuisine of the Baja area of Mexico, including the fish taco which was, and still is the main item since the founding of the company. Though, their menu expanded and contains more seafood items such as shrimp quesadillas or lobster burritos. Also, at each of Rubio’s restaurants, you can enjoy grilled and marinated chicken and steaks.

Even though the service offered by Rubio’s restaurant is fast-food type, every chain location cooks most of its food on a daily basis, making sure that the chips, the salsa, the beans, the guacamole, the sauces, and the rice are fresh. Also, even though the take-out service is available, customers are encouraged to dine in-house through the casual, Baja-inspired atmosphere from the restaurant. The interior design of every location includes patio table shaded by thatched-palm palapa umbrellas, decorative surfboards and aquariums.
