Schlotzsky’s was founded in 1971 by Dolores and Don Dissman. Their first restaurant was located in a “small, hole-in-the-wall shop” from Austin, Texas, on South Congress. In the beginning, the restaurant’s menu included just one sandwich, named “The Original”. It was made of a freshly baked, toasted bun, mixed meats, black olives, and cheese.
By the year 1981, one hundred Schlotzsky’s restaurants were already opened. That year, the real estate investors Gary Bradley and Jeff Wooley bought the business for less than $3 million.
The menu of the restaurant was expanded under the management of the new owners. So, specialty pizzas, soups, salads, toasted wraps, and others were introduced to the menu. Also, on 15 December 1995, the Wooleys took the company public, trading it on NASDAQ as BUNZ.
Schlotzsky’s peaked in 2001 with more than $400 million in sales and 759 locations. But starting with 2003 the company’s sales decreased and it went through some managerial changes. In 2006 Schlotzsky’s was purchased by Focus Brands.
