Brand History
Bonefish Grill restaurant chain was founded by Chris Parker and Tim Curci. The first restaurant was opened in January 2000 in St. Petersburg, Florida. These two founders have opened the first three locations which have been sold to Bloomin’ Brands in October the next year.
The one hundredth Bonefish Grill location was opened within the next five years, in 2005. Other 23 locations were opened in 2007. Most of the restaurants are located in its home state of Florida, even though the company expanded throughout the United States.

As they continued to develop, they became partners with Ocean Trust, which is a well-known conservation organization. Its main focus is the preservation of fish and the ocean as a whole. Even today, Bonefish Grill donates $1 for each Ocean Trust Mango Martini sold in their restaurant.
Over time, this company has entered into partnerships with other reputable charitable organizations like the American Red Cross and the Operation Feeding Freedom mission. This restaurant is well-known among customers for compensating the meals of the military members who eat there.

They have been devoted to offering authentic products from the opening of the first restaurant in 2000 until the present times. All of their fish is carefully inspected when received and freshly cut every single day. The company conducts periodically DNA testing on its fish to check species accuracy and so to accomplish their goal to serve food of the best quality possible. Also, they are involved in ocean research to discover new species of fish.
A unique and interesting thing about Bonefish Grill is that many items from their menu are named after people who are direct relatives of both the president and the founder of the company. For instance, the entrée Sir Will’s Fish & Chips is named after the son of the restaurant president, John Cooper, and Jen’s Jamaican Coconut Pie is named after Tim Curci’s wife, Jen.
Most of the fish served at Bonefish Grill is prepared in a wood-grilled style. The most popular item on the entire menu is the Bang Bang Shrimp appetizer, but the customers love also the salmon. This popular appetizer can be bought for only $7 on Wednesday nights.
At all of the Bonefish Grill locations, you can find a fully stocked bar that includes a wide range of martini choices. Even though the main attraction of the restaurant is the menu, it also has a high reputation for its cleanliness and service.
