Pollo Tropical was founded in 1988 by the two brothers Stuart and Larry Harris. The first restaurant was located in Miami, around 37th Avenue, and it is still there, newly refashioned and looking brand-new. This company went public in 1993 through the first offering of shares worth one and a half million dollars.
Pollo Tropical company reached the $50 million sales mark in 1994, and the same year the headquarters moved to Dadeland, the actual location. In 1995 this restaurant opened a franchise in Puerto Rico and so expanded outside the United States of America. Also, in 1996 there was opened another restaurant.
In 1998 Carrols Corporation bought Pollo Tropical.
Pollo Tropical won the Golden Spoon Award for its differential business concept and citrus marinade in 2002. This eatery also set the Guinness World Record for serving the largest portion of rice and black beans.
The franchise expanded westwards and in 2006 opened a new location in Pinellas Park, Cape Coral, and Tampa. Carlos Corporation separated from Pollo Tropical and Taco Cabana in 2011 in order to create a new, independent public trading company called Restaurant Group which was managed by Tim Taft.
