Brand history
The former Pepsi marketing executive Aaron Kennedy is the one who came up with the idea of opening Noodles & Company. After he ate at Mamie’s Asian Noodle Shop in Greenwich Village, New York, he had the feeling that there are not enough restaurants where you can enjoy noodle dishes, which are a staple for many international cuisines. So, in 1994, he began to develop recipes out of his mother-in-law’s kitchen with the head chef, Ross Kamens, and the future Chief Operating Officer, Joe Serafin.

In order to start this business, Aaron raised $200,000 in investment from 24 family members and friends and used $72,000 in personal funds. In October 1995 the first Noodles & Company location was opened in the Cherry Creek neighborhood of Denver, Colorado. Kennedy became a partner with the real estate developer Tom Weigand and opened a second location in March 1996, in Madison, Wisconsin.
Noodles & Company went through harsh times in the beginning. They lost $42,000 in the first three months, and in 1996 almost went out of business after a reporter published a negative review in the Wisconsin State Journal. But Aaron Kennedy wanted to get back on track and made a complex list of fifteen areas of improvement. After the implementation of these changes, the company registered impressive revenues. In 2013 Noodles & Company went public.
Noodles & Company started franchising and expanded all over the country. Currently, there are 458 locations in the United States of America.

The Noodles & Company menu includes American and international noodle dishes. Besides these, there you can find pasta, salads, and soups. Also, they serve desserts such as Rice Krispies Treats, Chocolate Chunk Cookies, Snoodledoodle Cookies, and baguettes. The majority of the pasta entrees come vegetarian with optional protein toppings like beef, tofu, shrimp, or chicken.
Clients must order at the counter and then they are served at their table, in general, within five to seven minutes. The average cost of a meal is around $10 per person. Also, customers can order online for to-go or dine-in, with most locations offering curbside pickup and some locations that offer drive-up lanes for pick-up.
Their catering menu is a little more expensive, but the meals are large enough to feed eight to ten people. Plan on spending $38 to $45 for spaghetti with marinara sauce or buttered noodles.
The furniture in all of Noodles & Company restaurants is made of recycled bamboo and they make intelligent use of soft lighting. The seating décor is in form of community tables and benches.
One of the customers’ favorites is the Noodles & Company menu is the pulled pork mac and cheese. Also, very appreciated are the classic mac and cheese, spaghetti, and meatballs. The garlic bread is very tasty as well and the fancy-looking soda fountains offer various soda types.
